Thematic approach to Food Technology
Students undertake a thematic approach with a different topic each term. So far we have completed work using the following themes, Celebrity, Crime and punishment, Sports, TV and film, Out of this world and Power.
For each theme, we are teaching the students the basic skills within the kitchen alongside a development of tasting new foods, introducing new cultures& styles as well as planning and creating their own dishes.
In “out of this world” we researched Heston Blumenthal’s work that he did with Tim Peake and the ESA, and replicated the same process using our own creations. In “TV and film” we watched Julie and Julia and completed the same process by taking Chef Tom Kerridge as our case study. For the topic “Crime and Punishment” we worked with a bread and water topic and produced different breads from around the world.
Coming up we will be working on the themes of Colour, Intelligence and Myths, Legends and Beliefs which are going to be very exciting projects.
For the KS4 program, our aim is to provide the students with Professional Qualifications to fill the work gaps within the Island and to provide skills that can lead straight to employment on leaving school.
In KS4 the students will continue with their journey to learn new recipes skills and knowledge. Further knowledge of nutrition, hygienic practise and Health and Safety will be gathered. Students will cook once a week for a double lesson, this lesson will also be used to complete written coursework towards their qualifications and also gather practical evidence .
Year 10 – ABC Level 1 award in the Introduction to the Hospitality Industry.
This is an introductory qualification that includes units in Customer care, The hospitality industry, Commodities, Food preparation and Cookery and Food service. It is very practical with a supporting element of theory work that is required to be completed to complete the qualification. Students will be expected to plan events in which they will be serving foods and drinks.
Year 11 – ABC Level 2 Certificate in general Patisserie and Confectionery
This is a wonderful specialist qualification and skill that is a shortage work area and in which chefs are in high demand. It covers the basics of Bread making, Pastry, Biscuits , hot and cold desserts with the requirement of completing practical and written assessments where distinction grades can be achieved for outstanding work.
Healthy, Safety and Hygiene
Safety and Hygiene are paramount so students must not wear false nails or nail polish when taking part in Food Technology lessons. Students should have long hair tied back and fringes clipped out of the way (regardless of gender). Excessive make up should not be worn. Students must be prepared with their own hair bands and clips, aprons and hats will be provided.
